“The idea of Pongo’s Eatery sparked in the rubble of the Covid Virus’s first wave. At the time we were homebound and whilst we enjoyed BBQ and food in general – it just wasn’t feasible at the time to afford or obtain (due to restrictions) what was considered the high-end cuisine to us. We honed and perfected our techniques through hours, days, and a full few years of trials and tribulations and eventually decided it was time to share our meager offerings with friends and family. The feedback was good – but we weren’t convinced so we tried doing a small food booth at our local farmer’s market. Everything needed to sell some grub was loaded into our trusty hatchbacks and unloaded on site. We’re talking a 36” Griddle, Generator, 2 50qt coolers, Wash bins, drinks/sides, tables, tent, propane – the whole 9 yards. It was a lot of work but the feedback from the public made it worth it and we developed a passion for serving not only great food – but giving the best possible experience a customer can have and making that moment of interaction just a bright spot in their day.
