Our story
born in Texas, raised in Michigan
Pongo's started with a simple frustration: great barbecue that you couldn't feel good about eating. So we built a truck around the opposite — grass-fed beef, real wood, scratch cooking, and two family traditions on one smoker.

How it started
Our pitmaster grew up between two kitchens — weekends around Texas smokers, weeknights in his abuela's kitchen where everything was made from scratch and nothing came from a bottle. Pongo's is what happened when those two tables became one.
We brought that pairing to Michigan with a rule we don't break: if we wouldn't feed it to our own family, it doesn't go in the window. Grass-fed beef from Cook's Farm, organic spices, real oak and hickory — cooked patiently, served honestly.

The rig
You'll find us parked around Clarkston and Ortonville — at the parks, near the breweries, and at the weekend markets. We smoke a fixed amount every morning and serve until it's gone, so showing up early is always a good idea.
We also cater weddings, company lunches, and backyard parties across Michigan. Same smoker, same standards — we bring it to you.
